Super Easy Chickpea Tuna Sandwich

Ingredients

  • 1 can chickpeas, drained
  • 1/4 cup onion, choppeed
  • 1 Tbsp vegan mayonnaise
  • 2 Tbsp hummus
  • 1 tsp maple syrup
  • 1 tsp dijon mustard
  • 1 Tbsp dried dill (or fresh dill)
  • Juice of 1/2 lemon
  • 1/2 tsp salt
  • pepper
  • Fillings of your choice - lettuce leaves, baby spinach, tomatoes, or whatever takes your fancy :)

Method

  1. Mash the chickpeas in a large bowl (either with your hands or with a potato masher), add all the other ingredients to the bowl, mix and enjoy in a sandwich with your fave fillings like lettuce and tomatoes.
