Super Easy Chickpea Tuna Sandwich

Ingredients
- 1 can chickpeas, drained
- 1/4 cup onion, choppeed
- 1 Tbsp vegan mayonnaise
- 2 Tbsp hummus
- 1 tsp maple syrup
- 1 tsp dijon mustard
- 1 Tbsp dried dill (or fresh dill)
- Juice of 1/2 lemon
- 1/2 tsp salt
- pepper
- Fillings of your choice - lettuce leaves, baby spinach, tomatoes, or whatever takes your fancy :)
Method
- Mash the chickpeas in a large bowl (either with your hands or with a potato masher), add all the other ingredients to the bowl, mix and enjoy in a sandwich with your fave fillings like lettuce and tomatoes.
