Our cooking times include the time it takes to prepare the ingredients and then cook the dish. If a dish has to stay in the over for a long time, or even needs to stay overnight, we will mention specially.
We often find that there is a drastic difference in the time it takes to prepare a dish for the first time and how long it takes to prepare the same dish later on again. Generally, when cooking a dish for the first time, it just takes so much longer since one needs to continuously study the recipe and deal with unfamiliar ingredients and procedures.
Thus we include with all our recipes two cooking times (which include preparation and then cooking); one for making the dish for the first time and one for making the same dish later on once you know how it is done.
Of course the cooking times are just estimates and how long it takes you might vary. However, all our cooking times are normalised by taking the time it takes each of the three authors of this blog to prepare the meals into account.
